The poise of those enemies isn't that high, so you can easily stunlock them with 2-handed attacks and benefit from the counter damage. Rapier is also the best way to deal with all bosses. I think ciaran's armor looks pretty awesome on a dex build. None, live by the roll die by the roll. As others said offensive stats don't matter for defense, just get armor that keeps you at the roll level you like and upgrade it or upgrade your carrying cap. Light armor.
