(Always do a guard command one time on your pet/thrall at your base so they will come back there). This will act as a respawn location for them. When in the field always use 'stop following' and never guard unless you want to move that respawn location. Your pet/thrall will stand there and essentially guard the same way. Make sure the play button is active in the top right of the taming pen menu (L2) always gets me. Meat does nothing for bears (not entirely intuitive or realistic, but oh well), they want fish, berries and honey.
